Kystyby with Milk Dough (Tatar Flatbreads)
Tatar cuisine never stops surprising — make it and enjoy! Today we had an interesting breakfast: kystyby. I "borrowed" the recipe from Tatar cooks. The dish is hearty enough to carry you through to lunch. It comes together quickly, though you do still have to knead the dough — but what wouldn't you do for the family you love?

- The dough is very simple to make: pour the milk (warmed to room temperature) into a bowl and add the sugar, salt, and melted butter. Gradually work in the sifted flour and knead the dough. It comes out springy and very pliable — a pleasure to work with. The filling is mashed potatoes: boil the potatoes and mash them with salt and milk. Stir the onion (sautéed in vegetable oil) into the finished mash. The last step is the flatbreads: divide the dough into 6 pieces and roll each one out thin. Fry them in a skillet on both sides in vegetable oil. Spoon the filling onto the hot flatbread right away — only onto one half, then fold the other half over the kystyby. Brush the top generously with butter. Eat up and enjoy!
