Chicken Salad with Strawberries and Pistachios
This salad will be the star of any festive table. You can leave the mint out, since not everyone likes it in salads — though in my opinion it's perfect here. My husband, however, absolutely can't stand mint in salad. So it's best to add just a small spoonful at first and, if you like it, mix in the rest.

- Boil the chicken until cooked through. Set the meat on a plate to cool, then pull it apart into shreds. 2. Hull the strawberries and cut them into strips. 3. Coarsely chop the pistachios. 4. Grate the cheese on the coarse holes of a box grater. 5. Wash the mint, pull off the leaves, and tear them into small pieces. 6. Combine all the ingredients, dress with mayonnaise, and toss. 7. For the garnish: wash the mint; hull the strawberries and slice them thin. Coarsely chop more pistachios. 8. Mound the salad in the center of a plate, decorate with strawberries and mint, and scatter the chopped pistachios over the top.
