Pork and Egg Noodle Soup

Asian cuisine? Why not — make a restaurant-worthy dish at home! For some reason, I didn't like soup as a kid. I'm not sure why — maybe because it felt so monotonous. I don't want to repeat that with my own kids, though, because I know how important it is to eat broth-based dishes for your health. So I try to make all sorts of different soups, to make every day feel like a little celebration. Here's one of my favorites: pork and egg noodle soup. Give it a try — it's really tasty!

  • In a deep-sided skillet, heat the oil over the heat, add the cut-up pork, and season with salt and pepper. Fry until cooked through. Cook the egg noodles according to the package, stopping just short of fully done. In a heavy-bottomed pot, add the chopped onion and the ginger. Sauté for 2 minutes, stirring constantly. Pour in the broth. When it comes to a boil, add the noodles and keep cooking for 3–5 minutes. Stir the soy sauce into the broth, then add the fried pork, grated carrots, and sliced radishes. Ladle the finished soup into bowls, topping each with slices of hard-boiled egg and chopped green onion. Enjoy!
