  • To make the fruit butter, choose ripe fruit. Wash the apples and pears and cut them into small pieces. Remove just the cores — leave the skins on. Put the prepared fruit in a pot, add half a cup of water, and cook. Once the pieces are soft, press them through an ordinary sieve (or purée them with a blender). Stir the sugar into the purée and cook over low heat. Keep stirring so it doesn't scorch. Cook until the mixture has reduced by about a third in volume — this takes around an hour and a half. Spoon the finished butter into clean, dry jars and seal them airtight. Here's to sweet cups of tea this winter!
