Let me tell you about a carob drink that's a bit like cocoa but more aromatic and far more wholesome!

  • Carob is a powder made from the dried fruit of the carob tree. It's native to the Mediterranean and tastes sweet with a coffee-like note. Carob is rich in vitamins and minerals, doesn't trigger allergies, and contains none of the mood-altering, habit-forming compounds found in coffee, cocoa, and chocolate. 1. To make carob "cocoa," pour the milk into a saucepan and set it over the heat. 2. Sift the carob powder into a deep bowl, add a little warm water, and stir well. 3. Stir the carob mixture into the milk and bring it to a boil, whisking gradually as it heats. 4. Turn off the heat, add the sugar if using, stir, then turn the heat back on. Simmer the drink over low heat for another 3–4 minutes. 5. Pour the finished carob "cocoa" into cups and serve hot with your favorite baked goods or other treats. Enjoy!
