Stuffed Cabbage Rolls (Golubtsi) with Tomato Paste and Garlic, Using Young Cabbage

- To prep the cabbage leaves, fill a pot halfway with water and bring it to a boil. Lower the head of cabbage into the hot water for 1-2 minutes and gradually peel off the leaves one at a time. Meanwhile, boil the rice until it's about half-cooked. Mix the ground meat with the rice until evenly combined; if the mixture seems too dense, stir in 150 ml (about 2/3 cup) of water. Season with salt and spices to taste. Put 1 tablespoon of filling on each cabbage leaf and fold it up like an envelope. Dredge the finished rolls in flour and fry them in a skillet on both sides until golden. Transfer the fried rolls to a sauté pan or pot. Then chop the onion, carrot, and garlic and sauté them together for 5-8 minutes. At the end, add the tomato paste and 200 ml (about 1 cup) of water and simmer for 2-3 minutes. Pour this sauce over the cabbage rolls, adding a little more water if needed so they're fully covered. Once it comes to a boil, simmer for 30-40 minutes. Serve these young-cabbage rolls with sour cream, alongside new potatoes or mashed potatoes.
