Spinach Ravioli

- Start with the dough, since it needs to rest for an hour — and we'll use that time to make the filling. Mix all the dough ingredients together and knead until you have a smooth, elastic dough. Shape it into a ball and wrap it in plastic wrap. Let it rest for 1 hour at room temperature (about 72°F / 22°C). Pick over the spinach leaves carefully and rinse them in cold water. Put the spinach in a pot, cover with water, and cook just until the leaves change color, about 5-7 minutes. Drain in a colander and let the liquid run off, but don't wring the leaves out too hard. Purée the spinach with a blender. Put the farmer cheese in a bowl and add the breadcrumbs. Beat in the eggs and add the finely grated hard cheese. Mix until smooth. Stir the spinach purée into this mixture, then sprinkle in the lemon juice. Season with salt and pepper. Roll the dough out as thin as you can — ideally about 1 mm. Cut it into 2-inch (5 cm) squares. Place a teaspoon of filling on one square, cover with another square, and press the edges with your fingers to seal, pushing out the trapped air. Cook the ravioli in batches in salted boiling water for 5 minutes. Lift them out with a slotted spoon and let them drain in a colander. Melt the butter in a skillet and fry the sage leaves in it. Garnish the plated ravioli with the sage and a sprinkle of grated cheese. Your Italian ravioli is ready — dig in!
