Cooking method
The first step is to prepare the dough, as it needs to lie down for 1 hour, and during this time we will prepare the filling.
Mix all the ingredients for the dough and knead an elastic and homogeneous dough. Roll it into a bun and wrap it with cling film. Allow to lie down for 1 hour indoors at 22 degrees (room temperature).
Spinach leaves carefully sorted and rinsed with cold water. Put it in a container where it will be stewed. Fill with water and cook until the spinach changes color. It will take 5-7 minutes. Flip it into a colander and let the liquid drain. Don't even squeeze the leaves hard. Grind with a blender.
Put the cottage cheese in a bowl, and pour in the breadcrumbs. Beat in the eggs and sprinkle with cheese, grated on a fine grater. Mix until smooth. We introduce spinach puree into this mixture. Sprinkle with lemon juice. Season with salt and pepper.
The dough needs to be rolled out thinner. Preferably spread out to 1 mm. Cut into squares of 5 cm . Put the filling on one square with a teaspoon. Cover with the same square and press down with your hands around the bump so that the air comes out.
In salted and boiled water, cook the ravioli in portions for 5 minutes. Remove with a slotted spoon and allow to drain, placing them in a colander.
Melt the butter in a frying pan and fry the sage leaves in it. With them and decorate the ravioli in a plate, sprinkled with grated cheese on top. Our Italian ravioli is ready. you can help yourself.
