Cooking method

    This is a basic truffle recipe — you can vary it endlessly! Let's get started.

    Pour 100 ml of cream into a saucepan and melt one bar of chocolate into it.

    You should end up with a fairly thick chocolate mixture. At this point you can stir in a little cognac, rum, raisins, cake crumbs, or chopped nuts. Chill it in the refrigerator until the mixture firms up.

    Shell the pistachios and rub off as much of the skins as you can, then chop them finely with a knife.

    Using a spoon, divide the firmed-up chocolate mixture into about 15 portions.

    In the same saucepan (to save on dishes), melt the other bar of chocolate. Add a little cream to loosen it. Wearing thin rubber gloves, roll the chilled chocolate into balls and set them on a plate. Dip each ball into the melted chocolate, then drop it into the bowl of chopped nuts and roll it around so it's evenly coated.

    Arrange the truffles in containers and refrigerate — they'll keep for up to a month. That's it. Enjoy!
