Spring Rolls with Shrimp and Bell Pepper

A delicious, healthy, and original appetizer. Spring rolls come together from simple, easy-to-find ingredients, and they work for both a holiday spread and an everyday lunch or dinner. I've tried all kinds of fillings — meat, fish, vegetables — but my favorite turned out to be vegetables and shrimp; I love seafood! And on top of that, spring rolls are incredibly quick and easy to make.

    In a shallow bowl, combine all the chopped vegetables.

    Then add the shrimp to the vegetables and toss to combine.

    Dip a sheet of rice paper into warm water and hold it there until it's completely softened.

    Carefully transfer the softened sheet to a cutting board and smooth it out flat.

    Lay a lettuce leaf on the sheet, spread a little filling over it, and start rolling. Wrap it like a stuffed crepe, folding in the sides so the filling doesn't fall out.
