Spring Rolls with Shrimp and Bell Pepper
A delicious, healthy, and original appetizer. Spring rolls come together from simple, easy-to-find ingredients, and they work for both a holiday spread and an everyday lunch or dinner. I've tried all kinds of fillings — meat, fish, vegetables — but my favorite turned out to be vegetables and shrimp; I love seafood! And on top of that, spring rolls are incredibly quick and easy to make.
Cooking method

Step 1:
Get all the ingredients ready. Wash the vegetables and lettuce leaves well and let them dry.

Cut the pepper into thin, short strips.

You can cut the cucumber into strips or small squares.

Step 4:
Cut the tomato into small pieces too.

Step 5:
In a shallow bowl, combine all the chopped vegetables.

Step 6:
Then add the shrimp to the vegetables and toss to combine.

Step 7:
Dip a sheet of rice paper into warm water and hold it there until it's completely softened.

Step 8:
Carefully transfer the softened sheet to a cutting board and smooth it out flat.

Step 9:
Lay a lettuce leaf on the sheet, spread a little filling over it, and start rolling. Wrap it like a stuffed crepe, folding in the sides so the filling doesn't fall out.

This amount of ingredients makes about 3 rolls.

Cut each roll into bite-sized pieces.
