Kuban Borscht

Good old Kuban borscht will leave you full and happy! A quick aside for anyone about to say the Kuban borscht recipe is different — everyone makes it their own way, even in the Kuban region itself. The main thing is that it's thick enough for a spoon to stand up in, and that it's well spiced. Ideally, instead of tomato paste, you'd use tomato flesh puréed by hand. But that's extra fuss, so we'll swap in fresh tomato sauce (not paste).

  • Kuban borscht always calls for meaty soup bones — the sweet, marrow-rich kind that make a good, hearty broth. Wash them, chop them into small pieces, and start the broth. Add more meat to the bones — beef, pork, whatever you like; you can even add chicken. Top up with cold water and cook over medium heat until tender; figure about an hour after it comes to a boil. Peel and coarsely grate the beets and sauté them in vegetable oil with a splash of vinegar. Peel and finely chop the tomatoes and add them to the beets. Stir in the thick tomato sauce. If you like, add a touch of sugar — literally a teaspoon. Not everyone likes sugar in borscht, so I left it out. In another skillet, melt the butter and sauté the onion and carrot, then add parsley root. All of it should be finely chopped (the carrot can be grated). Crush the lard in a mortar with the garlic, salt, and dill — use lard with a yellow tinge, if you like. Cut the peeled potatoes into cubes, shred the cabbage, and slice the bell pepper into strips. Drop the potatoes into the broth and cook 5–7 minutes. Add the lard, stir, and bring to a boil. Add the carrot and the beet sauté. Let it cook a bit, then add the parsley root and onion. Cook for 5 minutes. Once the potatoes are done, add the cabbage, let it cook, then season with salt and pepper. Bring to a boil and turn off the stove. Cover and let it rest for 30 minutes. Serve with homemade sour cream and fresh herbs — enjoy!
