Kuban borscht

The good old Kuban borscht will leave you well-fed and satisfied! Immediately such a lyrical digression for those who will say that the recipe for Kuban borscht is different - everyone cooks it differently and in the Kuban itself, too. The most important thing is to have a spoon in the borscht, so that there are spices. It is better, of course, to take tomato pulp chopped into puree instead of tomato paste. But this is an extra fuss, so we replace it with fresh tomato sauce (not pasta).

In the Kuban borscht, soup bones with meat on them are sure to go, such sugar, rich. Wash them, chop them into small pieces and cook broth on them. Add more meat to the bones: beef, pork, whatever you want. Even chicken can be put. Add cold water and cook over medium heat until tender. After boiling, it will take about an hour.
Grate the peeled beetroot on a coarse grater and fry it in vegetable oil with vinegar. Finely chop the tomatoes, peeled. Add to the beetroot. Add tomato sauce thick, mix. If desired, add a little sugar, literally 1 chl. Not everyone likes sugar in borscht, so I didn't add it to the composition.
Melt butter in another frying pan, fry onions and carrots on it, add parsley root. All this should be finely chopped, and carrots can be grated.
Pound pork fat in a mortar, add garlic, salt, dill. Lard should be taken with yellowness (this is also done at will).
Cut peeled potatoes into cubes, chop cabbage, cut Bulgarian pepper into strips.
Put the potatoes in the broth and cook for 5-7 minutes. Add the lard, stir and bring to a boil. Add carrots and beetroot toasting. Let it cook and add the parsley root and onion. Cook for 5 minutes. When the potatoes are cooked, add the cabbage, let it cook and season with salt and pepper. Bring to a boil and turn off the stove. Cover it with a lid and let it stand for 30 minutes.
Serve with homemade sour cream and fresh herbs, bon appetit!
