Jamie Oliver's Beet and Feta Salad
A bright beet salad that's sure to lift your spirits! Here's a recipe for a really simple salad — one, two, and it's done. The only thing is, you'll need to boil the beets in advance, or buy them pre-cooked at the store (yes, they sell those now too). I caught this salad recipe on one of Jamie Oliver's shows and was pleasantly surprised that it calls for totally ordinary ingredients — he often uses something you just can't get your hands on.

Step 1:
Get the ingredients ready.

Peel the boiled beet and grate it. I use a Korean-carrot julienne grater, but a regular one works fine. Season the beet with salt and pepper (just remember the feta is already salty).

For the dressing, whisk together the olive oil, vinegar, and a few drops of lemon juice (to my taste, the lemon is optional). Finely chop the herbs and stir them into the dressing. Mix everything well and add it to the grated beet.

Toss the beet and arrange it on a plate. Top with pieces of feta.
