Okroshka on White Kvass with Radish and Mustard

My childhood-favorite okroshka, dressed up with brand-new flavors! It's a little spicy with a gentle bite of mustard, and the cold kvass brings a pleasant tang — together they make the unforgettable taste of this Russian summer cold soup that no one ever turns down. I love it, and I'd love for you to give it a try. I'd never had kvass like this before, but as luck would have it, an older woman once treated me to okroshka made with rye-flour kvass, black radish, and mustard. At first I couldn't place what the base was, but once I learned the recipe I was so surprised — and so won over — that I wrote it down. Now it's the only way I make it. Cooking method

    Boil the beef until tender, let it cool, and cut it into small cubes. Hard-boil the eggs and boil the potatoes in their skins, then cool and peel them.

    Dice the potatoes, cucumbers, beef, and eggs into small cubes.

    Peel and coarsely grate the black radish. Finely chop the onion and fresh herbs.
