Pickled Garlic Scapes
A bright, zesty dish that wakes up your appetite and your zest for life! I loved both the flavor and how fast it comes together. I first tried these at an event and instantly fell for the snack — that unusual sharp bite, the firm, snappy texture of the scapes, and the gorgeous look of them. I couldn't get the recipe out of anyone, though, so I worked it out myself. Now I treat my family to this wonderful dish every year.

- Garlic scapes (the curly green flower stalks of the garlic plant) are in season, and I always gather them to make a snack that goes great with meat. Today I want to share the recipe. My family loves it, and it would be a shame to let these scapes go to waste — so jot this one down in your recipe book. Snap the scapes off the garlic, trim away the tops, and blanch them in boiling water for 2 minutes. Cool them under cold running water and cut them however you like; I cut mine into long pieces, at least 6 inches (15 cm). Prepare your pint (0.5 L) jars — I wash and blanch them and sterilize the lids. For the marinade, use 2 tablespoons of salt, 2 tablespoons of sugar, and about 1/2 cup (100 ml) of 9% vinegar per quart (1 liter) of water. Bring it to a boil, add the salt, sugar, and vinegar, and let it steep. Pack the scapes tightly into the prepared jars in layers and pour the hot marinade over them. Process (sterilize) the jars for 10 minutes, seal the lids, turn them upside down, and let them cool. That's it — store them away.
