Borscht with Potatoes, Tomatoes, and Beans

An amazingly delicious, hearty borscht with tomatoes and bell pepper. So good. As it happens, living in Germany means I can't always buy the same ingredients I'd find in Ukraine. But we love borscht, so I adapted our Ukrainian borscht to work with what's on hand here. :) It tastes every bit as good, and the cooking time is much shorter.

  • So let's get started. Wash the meat, cover it with cold water, and put it on the heat. Bring it to a boil, skim off the foam, then simmer the broth over low heat until the meat is tender, about 1 hour. Meanwhile, wash, peel, and cut the vegetables. Take the meat out, cut it into small cubes, and return it to the broth. Bring it back to a boil, salt it lightly, and add the potatoes. Cook over low heat for about 5 minutes. Add the shredded cabbage to the broth with the meat and potatoes and cook for another 10 minutes over low heat. Meanwhile, make the sauté: fry the onion, carrots, and bell pepper in vegetable oil. Stir in the flour (also lightly toasted in oil). Add the tomatoes, sauté briefly, and add tomato paste if needed (if the tomatoes aren't very ripe or the color isn't deep enough). Mix everything and pour in some of the broth. Bring the sauté to a boil, lower the heat right down, and simmer for a few minutes, then remove from the heat. Add the canned beans and beets to the soup. At the end, add the allspice and bay leaf. Crush the garlic with salt in a mortar, add the fatback, and keep grinding until smooth. Stir the sauté into the borscht, mix well, bring to a boil, and finish with the garlic-and-fatback paste. Taste it, add ground pepper and salt if needed, along with finely chopped green onion and parsley. Bring it to a boil once more and remove from the heat. Let it rest for about 10 minutes (longer if you like). The borscht is ready. Serve with sour cream, garnished with parsley if you wish. Enjoy!
  • Use as much water as you like. You can add more or less depending on whether you want a thick or thinner soup.
