The calf's lung is well washed under running water. cut into small pieces and cook, changing the water several times after boiling (I changed it three times).
Meanwhile, while the lung is cooking (about 1.5 hours), we prepare pancakes. To do this, we drive eggs into a bowl, beat, add milk, water, mix, add flour, salt and knead the dough carefully so that there are no lumps. Fry the pancakes in a well-heated frying pan, greased with a piece of lard.
When the lung is cooked, we scroll it through a meat grinder. Finely chop the onion and fry until golden brown in oil. Then add the lung. salt, pepper and fry everything together.
We put a tablespoon of filling on each pancake and fold it into an envelope.
