- People have been putting up cabbage for the winter for ages, using all kinds of methods. Here's how to freeze it. If you don't have a good spot to store fresh cabbage through the winter, you can keep some frozen in the freezer instead. Keep in mind that once thawed, the cabbage won't be crisp anymore, so it won't work for salads. But it's perfect for dishes like stuffed cabbage rolls, borscht, or solyanka. You can freeze cabbage either as whole leaves or finely shredded. Whole frozen leaves are great for cabbage rolls: separate the head into leaves, blanch them for a few minutes in lightly salted water, then portion them into freezer bags and freeze. For future borscht or solyanka, shred the cabbage and pack it into bags. Put the bags in the freezer. As a rule, shredded cabbage doesn't need to be thawed before cooking.
