"Christmas Ornament" Salad with Pineapple, Walnuts, and Chicken

A simple but very tasty salad for the New Year's table! Chicken and pineapple go wonderfully together, not just in hot dishes but in salads too. With just a few ingredients you get a bright, rich flavor. Try making and beautifully decorating this salad for the upcoming holidays!

Cooking method

    Get the ingredients ready. It's best to use a chilled chicken breast — it comes out tastier and more tender. You can use any pineapple, canned in rings or pieces. If using fresh, make sure it's very ripe. The sweetness of the pineapple is one of the dish's signature touches. Use your favorite cheese — first and foremost, it should be tasty. You can use homemade mayonnaise.

    First, boil the breast. Bring water to a boil and lower the chicken into the boiling water. This is done so all the juices stay inside the meat instead of going into the broth, as happens when you cook it in cold water. Boil the breast for 30 minutes, adding salt during cooking. Then take it out and let it cool.

    Hard-boil the eggs. Put the pan of eggs on the heat, wait for it to boil, and cook for 10 minutes. Leave them to cool in the same water. Done this way, the eggs stay tender while being well cooked.

    Cut the fully cooled breast first into long strips, then into thin strips, then into cubes.

    Cut the eggs into cubes or just chop them finely.

    Cut the pineapple. Try to cut all the salad ingredients into roughly the same size pieces. It'll be not only pretty but tasty too. That's why we cut the pineapple into cubes.

    Sort through the walnuts well first so no bits of shell or membrane get in. Then chop them with a knife.

    Grate the cheese on a coarse grater.

    Put all the salad ingredients in one bowl.

    Mix and taste for salt. Add more if needed — just remember the mayonnaise will add saltiness too.

    Dress the salad right before serving. Salads with mayonnaise spoil quickly, so it's best not to store them.

    To shape the salad like a Christmas ornament, take dill, pomegranate seeds, and corn. Mound the salad on a plate. Lightly brush it with mayonnaise. Sprinkle with finely chopped dill. Lay out a pattern of seeds and kernels. It's easier to do if you first draw the pattern with thin lines of mayonnaise. Make the ornament's cap from foil and dill. Done! Enjoy!
