  • Carefully peel the oranges, removing all the white pith and seeds, and separate them into segments. Sprinkle the oranges with sugar and let them sit for about an hour. During this time they'll release their juice; mix it with water, add sugar, and cook for about 20 minutes. Then add the cinnamon and the prepared orange segments. Boil the orange compote over high heat for 5–10 minutes, watching that the segments don't fall apart. The result is a delicious, intensely fragrant drink. The combination of orange and cinnamon makes it wonderfully unusual and pleasant to taste. It's best to use tart oranges, since the compote comes out quite sweet.
