  • For this you'll want small, sweet cherry tomatoes — they work best here, since regular tomatoes are too big for the job. Wash each tomato well, then slice it into rounds and lay them out on a small white plate (any plate will do). Keep in mind that each piece of this little appetizer should sit on its own — side by side with the others, but never stacked on top. Pipe a dab of olive-oil mayonnaise onto each tomato round, then top it with a meaty pitted green olive. Curl a shrimp tail neatly around the olive, and finish with a generous sprinkle of freshly ground allspice. If you pan-fry the shrimp instead of boiling them, the flavor changes dramatically. If you like, you can spear each little tower of tomato, shrimp, and olive with a cocktail pick — it makes them much easier to grab.
