Compote of Fresh Berries and Fruit

The taste of childhood! A simple recipe for a wonderful homemade compote! Want to surprise your guests or treat your family? Now, a compote of fresh berries — the recipe I'm sharing today — is hard to call "food" even by a stretch, even with exotic ingredients. I just want to breathe new life into an old classic, uzvar (a traditional dried-fruit compote), by adding a little twist that makes it taste and look fresh and new. I think everyone will love this original recipe — and anyone can make it.

    Important: don't throw away the apple and pear peels or the cherry pits!

    Cover them all with boiling water and simmer for 10–15 minutes — it makes a lovely-colored brew! Strain it through a colander, stir in the sugar, and cook it into a syrup, skimming off the foam as you go. Then add the apples and pears (cut into pieces ahead of time) and bring it to a boil. Cook until they're almost done!

    Right at the end, add the apricots or plums — they cook quickly — and bring the compote back to a boil.

    Stir the cherries and sugar into the hot brew and let the sugar dissolve. If the compote ends up too sweet, add a little citric acid.

    Let it boil for a few minutes

    And you've got a delicious sweet compote — a great drink in the summer heat!
