Dogwood and Black Currant Compote

A bright, cheerful compote that refreshes and perks you right up! If you like, you can use this recipe to make compote from just the dogwood (cornelian cherries). And if you happen to have black currants, you can make it from those alone — without any dogwood. Or combine the two. Personally, I'm partial to currant compote. I love putting up preserves for the winter. You can find just about anything in my cellar, and compotes are high on my list. I make them from all sorts of fruits and berries — they're so handy. Just open a jar and drink as much as you please. No argument that a freshly made batch is better for you, but what can you do when there's simply never enough time for everything? Here's how I make dogwood and currant compote.

Cooking method

    For the compote we'll need: dogwood, black currant, sugar, and water.

    Put the dogwood and black currant in a jar.

    Make the syrup: bring the water to a boil and add the sugar.

    Pour the syrup into the jar.

    If you like to can compote for the winter, you can seal up the jar (sterilize it first). Wrap it in a towel. After a day, move it to a cool spot: a cellar, a pantry... But we're going to drink ours today. Let it sit and steep :)

  • Both of these berries are wonderfully healthful. So stock up on them in winter whenever you can find them. Pick berries that aren't overripe, or they'll fall apart in the jars. You can also toss a few raspberries in with the fruit — the aroma will be even more inviting.
