  • I cook the barley groats in cold, lightly salted water over medium heat, skimming off the foam now and then. Once the grains start releasing a thick, whitish mass, I drain off the excess water, transfer the porridge to another pot, and keep cooking it with the milk, stirring constantly. The result should be a thick porridge that spreads across the plate. I stir cottage cheese into the finished porridge and let it stand in the covered pot, off the heat, for five minutes. In the old Russian cookbooks — one of which is where I found this recipe — they'd tell you to "leave the porridge to steam through." The dish is ready; all that's left is to top it with butter and serve it right away, before it cools.
