Tajik cuisine is famous primarily for its pilaf. And yet, personally, when I hear the phrase "Tajik cuisine", I immediately imagine mutton. Yes, it is this meat that is the main ingredient of most Tajik dishes, and indeed any Oriental cuisine. And it seems to me a big, weighty piece of mutton.
