- Everyone knows Japanese food, Italian food — but hardly anyone knows how to cook Vietnamese dishes. So I decided to fill that gap in my own repertoire. I found a recipe, made it, and ate it with great pleasure — so I'm passing it along to you! Soak the rice in cold water for 5 hours, then rinse, pat dry, and mix in 1 tablespoon of salt. Soak the beans overnight, then rinse. Pour boiling water over the beans and let them drain. Once they've dried a little, mash them in a bowl with 1 teaspoon of salt. Grind the pork. Finely chop the onion and mix it with the pork, soy sauce, the remaining salt, and the pepper. Trim the thick ribs from the cabbage leaves and lightly pound the leaves flat. Onto each leaf, put 1 tablespoon of rice, then a tablespoon of beans, then 1 teaspoon of the pork mixture. Cover the filling with the rest of the beans and top with a layer of rice. Roll each filled leaf into a tube and tie it closed with a strip of green onion. Arrange the cabbage rolls in a wide pot, cover with water, and cook for 15 to 20 minutes. Lift out the finished rolls and set them under a light weight for 7 to 10 minutes so the excess water drains off. To serve, arrange the rolls on a platter, garnish with pickled onion, and offer soy sauce on the side. The recipe is a little like Russian cabbage rolls (golubtsy), so you could easily swap these in on a holiday table — they'll feel fresh and unexpected!
