Hearty Vinaigrette Salad with Herring, Green Onion, and Cabbage
This green-onion vinaigrette is a classic Russian beet salad and a great appetizer. It's loaded with vegetable goodness, pairs well with any main course, and looks stunning on the table thanks to all its bright colors.
Cooking method

Step 1:
Boil the potatoes in their skins in salted water for 20–25 minutes, until tender. Let them cool, peel, and cut into cubes.

At the same time, boil the carrots in a separate pot for 30 minutes. Cool, peel, and cut into cubes the same size as the potatoes.

Boil the beets for 50 minutes, let them cool, peel, and grate on the coarse side of a box grater.

Trim the ends off the pickles and cut them into cubes.

Wash the green onions and chop them.

Step 6:
Prepare the herring. Cut off the head, tail, and fins, and peel off the skin. Slit the belly and clean out the insides — remove the guts and any roe or milt, and scrape away the dark membrane with a knife. Pull out the backbone and remaining bones to get clean fillets. You can also use ready-made canned herring fillets.

Cut the fillets into cubes.

Wash the dill and chop it finely.

Start assembling the salad. Add the carrots, potatoes, and green peas (drained first) to a deep bowl. Stir to combine.

Add the beets, green onions, and sauerkraut. Stir again.

Add the chopped herring and stir again. Season with salt and ground black pepper to taste, pour in the unrefined vegetable oil, stir once more, and taste to check the seasoning.

Stir in the dill. The salad is ready! To serve, you can garnish it with fresh parsley or lemon slices. A friend taught me how to make this herring vinaigrette — I tasted it for the first time at her place, and now I'm happy to share the recipe with you.
