Cooking method

  1. Step 1:

    Step 1

Boil the potatoes in their skins in salted water for 20–25 minutes, until tender. Let them cool, peel, and cut into cubes.

  2. Step 2:

    Step 2

At the same time, boil the carrots in a separate pot for 30 minutes. Cool, peel, and cut into cubes the same size as the potatoes.

  3. Step 3:

    Step 3

Boil the beets for 50 minutes, let them cool, peel, and grate on the coarse side of a box grater.

  4. Step 4:

    Step 4

Trim the ends off the pickles and cut them into cubes.

  5. Step 5:

    Step 5

Wash the green onions and chop them.

  6. Step 6:

    Step 6

Prepare the herring. Cut off the head, tail, and fins, and peel off the skin. Slit the belly and clean out the insides — remove the guts and any roe or milt, and scrape away the dark membrane with a knife. Pull out the backbone and remaining bones to get clean fillets. You can also use ready-made canned herring fillets.

  7. Step 7:

    Step 7

    Cut the fillets into cubes.

  8. Step 8:

    Step 8

Wash the dill and chop it finely.

  9. Step 9:

    Step 9

Start assembling the salad. Add the carrots, potatoes, and green peas (drained first) to a deep bowl. Stir to combine.

  10. Step 10:

    Step 10

Add the beets, green onions, and sauerkraut. Stir again.

  11. Step 11:

    Step 11

Add the chopped herring and stir again. Season with salt and ground black pepper to taste, pour in the unrefined vegetable oil, stir once more, and taste to check the seasoning.

  12. Step 12:

    Step 12

Stir in the dill. The salad is ready! To serve, you can garnish it with fresh parsley or lemon slices. A friend taught me how to make this herring vinaigrette — I tasted it for the first time at her place, and now I'm happy to share the recipe with you.

  • Just about everyone has had a vinaigrette beet salad, but I'd bet few have tried it with herring. The name might sound a little intimidating, but trust me — it tastes amazing, because boiled vegetables and herring are always a winning combination. I found it interesting, tasty, and good for you. You can actually assemble the salad in any order — everything ends up in the same bowl in the end. Adjust it to taste: some people like extra peas, others like plenty of fish, and so on.
