Cooking method

    To make this homemade cottage cheese cake without gelatin, you'll need shortbread cookies, sour cream of any fat content, cottage cheese that isn't dry, and granulated sugar. It's best to use plain cookies with no flavorings, in a rectangular or square shape. I personally love using a plain shortbread cookie like "Jubilee Bouquet" or similar for desserts like this.

    Choose a soft, moist, perfectly fresh, natural cottage cheese. Mash it with a fork, then add the sour cream and granulated sugar. You can add a little vanilla sugar too. Mix all the ingredients for the cheese filling thoroughly.

    Put a little of the cheese cream on a flat plate and smooth it out. This keeps the cookies from sliding around on the plate as you assemble the cake. Lay the first layer of cookies on top.

    Then alternate layers of cheese cream and cookies to build a cake. The top layer should be cheese cream.

    Spread the rest of the cheese filling in a thin layer over the sides, filling in any gaps. A silicone spatula makes this easy. Refrigerate the gelatin-free cheese cake overnight so it can soak.
