Crab Sticks Stuffed with Egg and Sprats

This seafood appetizer will earn you a reputation as a wonderful host. Instead of sprats, you can use a thin slice of cheese for crab sticks stuffed with cheese. I've tried every stuffed-crab-stick recipe out there. This one is always a hit and makes a perfect addition to a party spread. One day my son's friend mentioned crab sticks stuffed with sprats, so I decided to experiment — and that's how this recipe was born. Simple, fast, and delicious!

  • My crab sticks were long, so I cut them in half. For the crab sticks to unroll easily, they need to be fully thawed. Unroll the crab stick halves, lightly spread the inside with mayonnaise, sprinkle on a little grated hard-boiled egg, lay a sprat on top along with some rolled green onion, and roll it back up. Try to roll it so the fish and green onion peek out slightly at the end — it makes the sprat-stuffed crab sticks look more striking. For serving, arrange lettuce leaves attractively on a platter and set the rolls on top. For a party presentation, you can also garnish the rolls with lemon slices and fresh herbs.
