- Pancakes aren't exactly diet food, but they're just so good! Every now and then you can treat yourself to a batch like these—especially since they have a little something special about them. Kids will love these tasty, wholesome pancakes for sure. The recipe for these unusual millet pancakes is fairly simple, and any home cook can pull them off. First, dissolve the yeast in a bowl with two cups of warm milk. Then add the flour, sifting it as you go, and mix up the batter. Cover the bowl with a clean towel and set it in a warm spot for about an hour and a half. Meanwhile, turn to the millet: sort it and rinse it well. Cover it with four cups of milk and cook it into a porridge. Let the porridge cool, then add the egg yolks beaten with sugar and salt, and stir everything together. In a tall bowl, combine the batter and the porridge, knead well, and let it rise once more. Then whisk the egg whites in a separate bowl and fold them into the batter a little at a time, stirring gently. After about 20 minutes you can start cooking the pancakes on a hot, greased skillet. They're even better served with honey or jam.
