Cooking time: 1 h 30 min

Mix the milk and cream, put the corn cobs, bring to a boil, then reduce the heat, cover and cook for 15 minutes. Remove the cobs from the milk and separate the grains with a knife.
Strain the milk mixture and put it back on high heat. Add the butter and, stirring constantly with a whisk, gradually pour in the corn flour. Continue stirring until the porridge becomes homogeneous and thick. Remove the pan from the heat, add chopped green onions, corn kernels, peeled from seeds and finely chopped chili pepper, season with salt and pepper to taste. Separate the egg whites from the yolks. First, beat the yolks into the porridge. In a separate bowl with a mixer, beat the whites to a thick foam and gently put them into the porridge. Mix well. Whipped whites will give the pudding airiness.
Preheat the oven to 150 degrees. Grease the baking dish with oil. Put the dough into a mold and bake for 25 -30 minutes. The pudding should have the consistency of a souffle and a golden brown color.
Spoon out the corn pudding from the mold and arrange it on plates.
