Tomato Seafood Soup with Mussels, Shrimp, and Squid

  • Pour the vegetable oil into a pot and heat it up. Sauté the chopped onion, garlic, bell pepper, and hot chili pepper in it. Toward the end of the sauté, add the peeled tomatoes and cook for a minute, stirring. Add the wine and simmer for 5 minutes. Pour in the fish stock and wait for the soup to come to a boil. Now add all the seafood you have. Cook for 5 minutes. Season with salt and spices. Then turn off the heat and let the soup rest for 5 minutes. Ladle it into bowls and finish with fresh herbs. I like a thick soup—one where the spoon stands up on its own ))) but you can make it however you prefer.
