Argentine cuisine
Before the arrival of the Spaniards, corn, potatoes, legumes, avocados, and tomatoes were already grown here. Squash, too. The famous pastries — empanadas — have fillings of every kind, from sweet to meat. The dough for them is kneaded from wheat, corn, or rice flour. Local fruits are turned into juices and syrups.
Towns and settlements along the rivers cook fish beautifully. They bake it on stones as well.
Central Argentine cuisine resembles Spanish and Italian, with a local flavor — the Milanesa cutlet, pasta and pizza, alfajores and tortillas. From the Russians, Argentines borrowed Olivier. They call it Russian salad.
Argentina's coast is rich in fish and seafood. The recipes are standard — a grill grate or asado (red-hot cobblestones).
For something sweet, there is the world-famous dulce de leche. Milk boiled down with sugar and baking soda into a caramel cream. It takes more than an hour of constant tending, but afterward it is used simply with tea and in hundreds of other desserts. There is a delicious homemade pie filled with this Argentine dulce de leche.
