Baked Rice with Shallots, Cheddar, and Sour Cream

It makes a great side for pan-fried meat, roast chicken, or poached fish — and it stands on its own as a main, too. You can find green chiles at the supermarket, or swap in the more common red chile.

- Heat the oven to 350°F (180°C). 2. Rinse the rice thoroughly under running water several times, until the water runs completely clear. Separately, bring some clean water to a boil. Put the rinsed rice in a medium pot and pour in the hot water — it's best not to start rice in cold water, since it soaks up extra liquid as it cooks and can turn mushy. Salt the water to taste and simmer the rice over moderate heat until done. As it cooks, it's best not to lift the lid (so the steam stays in) or stir the rice. Once the rice has absorbed all the water, take the pot off the heat and let it cool to room temperature. 3. For this dish you'll want canned green chiles, available at the supermarket. If you can't find green ones, swap in the more common red chile, which is a bit hotter, so dial the amount back slightly. Drain off the excess liquid and dice the chiles. 4. Peel, rinse, and finely chop the shallots. 5. Coarsely grate the cheddar (you can swap in another firm cheese like Edam or Gouda). 6. In a large bowl, combine the cooked rice, diced canned chiles, shallots, and cheddar. Add the sour cream and mix again. 7. Spread the rice mixture in a baking dish and bake in the preheated oven for about 40 minutes, until the cheese around the edges turns golden brown. 8. Take the dish out of the oven, let it cool slightly, and serve. Enjoy!
