New Year's "Bone" Salad for the Year of the Dog
A bone-shaped salad to bring good luck in the Year of the Dog! There are plenty of salads shaped like a dog — the symbol of the year. But surely the symbol of the year wouldn't want to be "eaten," least of all on a holiday! Its favorite treat, though — a bone — is just the thing! This salad is hearty, tasty, and simple. (A festive Russian layered-style salad shaped like a bone.)

Step 1:
WHAT YOU'LL NEED: beef (or veal); eggs, preferably farm-fresh; dill pickles, ideally barrel-cured — they have a sharp, hard-to-describe tang that everyone loves! Korean-style carrots (you can make your own); onions; mayonnaise (I much prefer homemade); a little vegetable oil for frying the onion; a bay leaf and allspice for cooking the meat; salt and pepper to taste.

Step 2:
HOW TO MAKE IT: Rinse the beef (or a piece of young veal) well under running water, put it in a pot, cover with water, and add the bay leaves and allspice. Set the pot over the heat and cook the beef until done, about 45 minutes.

Let the meat cool slightly, then cut it into strips.

Cut the dill pickles into strips.

Cut the onions into strips.

Step 6:
Fry the onions in vegetable oil until golden.

Step 7:
Hard-boil the eggs and let them cool. Separate the whites from the yolks. Finely grate the yolks.

Finely grate the egg whites.

In a deep bowl, combine the strips of beef and pickle, the fried onion, the grated yolks, and the Korean-style carrots (you can also cut the carrots to match the length of the other strips). Season with salt and pepper to taste and mix everything well and gently.

Add the mayonnaise and mix again.

Step 11:
Carefully arrange the salad on a long rectangular platter, shaping it into a bone. Garnish with the grated egg whites. That's it — the "bone" is ready! Set it on the holiday table to bring good luck in the Year of the Dog. Happy holidays and Happy New Year — health, peace, and warmth to all!
