Green Lentil Salad with Tomatoes and Mint

Gather the ingredients for this delicious lentil salad, and wash the vegetables and herbs.

Rinse the lentils a few times before cooking, then cover with water — about two parts water to one part lentils — and set over the heat.

Once it comes to a boil, cook the lentils for half an hour over low heat with the pan covered.

While the lentils cook, prep the rest: cut the onion into thin quarter-rings.

Pour boiling water over the sliced onion.

Add the vinegar to the onion, stir, and let it sit for 10 minutes to quick-pickle.

Near the end of cooking, salt the lentils, then turn off the heat 5 minutes later. By then the water will have cooked off and the lentils will be done.
