  • A truly wonderful weight-loss kissel (a Russian thickened drink), praised by absolutely everyone who's tried it even once. The best results, of course, come from drinking it every day while following a sensible diet. If you're making this kissel for a child (which, I should say, is very good for them), you can enrich it with a pat of butter for extra flavor, and add sugar. For ourselves, we make it without butter or sugar — for us it's not a treat but a necessity. Grind all the grains this recipe lists in an electric coffee grinder — barley, rye, wheat, oats, and bran — into a flour. Now mix everything carefully with cold water (cold, because hot water can form lumps in the kissel, which we definitely don't want). Then set the mixture over low heat and cook, stirring, until it thickens. The whole thing should take about seven minutes — to be exact, the kissel should cook for exactly five minutes after the water comes to a boil. Stir in the grated zest of one orange. Take the pot off the heat, set it somewhere convenient, and wrap it in a blanket. Leave it for two hours so the kissel can steep properly.
