Mushroom Soup with Onion, Potato, Carrot, and Rice

A fragrant, rich mushroom soup with bulgur! Today I'm making mushroom soup with oyster mushrooms — the little bit left in the fridge after yesterday's spelt (achar) pilaf. In life I follow the principle from a famous cartoon: "Use what's on hand and don't go looking for anything else." And on hand — in the fridge, that is — I've got mushrooms (oyster mushrooms in particular), a small onion, a carrot, a glass of milk, a couple of potatoes, and a little fresh herbs. For the soup I'll also need some rice and bulgur, though you can skip the bulgur and just use more rice, plus a spoonful of flour, salt, pepper, and vegetable oil.

    Dissolve the flour and salt in a little water.

  • So: in a pot, start by stewing the finely chopped onion, carrot, and potato in a little water (you can fry them, but I prefer them stewed). Add the chopped mushrooms to the slightly softened vegetables, stir, pour in the hot milk, and bring to a boil. Pour in all the hot water and add the rice and bulgur. In a separate bowl, dissolve the flour and salt in a little water and stir it into the boiling soup; at the end, add the vegetable oil and ground black pepper. Cook the soup until done. Stir fresh herbs into the finished hot soup (I use cilantro).
