Fragrant rich mushroom soup with bulgur! Today I will cook mushroom soup from oyster mushrooms, a small amount of mushrooms that were left in the refrigerator after yesterday's pilaf from achar (from spelt). In general, in my life I adhere to the principle from the famous cartoon: ‘Use everything that is at hand and do not look for someone else'. And at my fingertips, that is, in the refrigerator, there are mushrooms, in particular oyster mushrooms, small onions, carrots, a glass of milk, a couple of potatoes, a little greens. And for the soup I need some rice, couscous (blgur), but you can do without it, then you need to take more rice, a spoonful of flour, salt, pepper, vegetable oil.

So, in a saucepan, I start stewing finely chopped onions, carrots and potatoes in a small amount of water (you can fry them, I personally like stewed ones)
I add chopped mushrooms to the slightly steamed vegetables, mix, pour hot milk, bring to a boil, pour all the portion hot water on the vegetables, add rice and couscous.
In a separate bowl, I dilute flour and salt with a small amount of water, add it to the boiling soup, and at the end I pour vegetable oil and ground black pepper. I cook the soup until it's ready.
I add greens to the ready-made hot soup (I have cilantro).
