Sauerkraut Shchi with Potatoes and Chicken

A classic shchi recipe — nothing beats it! This soup is delicious and never gets old. (Shchi is a traditional cabbage soup; this version uses tangy sauerkraut.)

  • For the broth, simmer the chicken until cooked through. Once it's done, add the diced potatoes to the broth and season with salt. Bring it back to a boil and cook for 5 minutes. Now stir in the sauerkraut, rinsed under cold water. Let everything cook for about ten minutes over low heat. While the soup simmers, make the sauté: in a hot skillet, cook the carrots and onion together until soft. Stir the sauté into the broth and cook for another seven minutes or so. Turn off the heat and cover with a lid. Your shchi is ready. Enjoy — and don't forget a dollop of sour cream!
