  • Toast the flour in a dry skillet until it turns lightly golden. Add the butter, stir, and cook for another moment. Pour in the hot broth and whisk thoroughly so no lumps form. Bring the sauce to a boil, stirring the whole time, then simmer over very low heat for about 20 minutes, until thickened, skimming off any foam now and then. Strain the sauce through a fine-mesh sieve (pressing it through if needed). Let it cool and use as desired. Any broth works here — beef, chicken, fish, or vegetable — whatever you prefer.
