Turmeric Rice with Ghee

Turmeric not only gives food its signature golden color but also does your body good — it's a prized spice with antiseptic, mood-lifting, and metabolism-boosting properties. If you're using basmati rice, add a little more water.

  • In a small saucepan, melt the ghee and warm the turmeric in it, along with a few black mustard seeds if you like (they're optional, but they add a lovely distinctive flavor). Add the rice to the hot ghee and let it warm through, stirring constantly. The grains will absorb some of the fat and turn translucent. Now add the boiling water very carefully: pour in just 1-2 tablespoons first, letting it spread across the bottom of the pan, then gradually add the rest. Adding it all at once makes the rice bubble up violently and can splatter you with hot, oily water. Season with salt, reduce the heat to low, cover, and cook for 20 minutes.
