- Heat the oil in a large pot and add the chopped onion. Sauté for 3–4 minutes, until translucent, then add the minced garlic and cook another couple of minutes. Blend the tomatoes to a puree, add it to the pot, and pour in the water. Bring the soup to a boil, then lower the heat to medium. Season with salt, pepper, dried herbs, and finely chopped fresh basil. Blend the soup smooth with an immersion blender and let it simmer a couple more minutes. Serve topped with fresh basil and croutons, and a swirl of cream or a little crumbled feta if you like.
