Heat the oil in a large saucepan and add the chopped onion. Fry for 3-4 minutes until translucent, add chopped garlic and fry for another couple of minutes.
Chop tomatoes in a blender. Add the resulting puree to the roast and add water. Bring the soup to a boil, reduce the heat to medium. Add salt, pepper, herbs and finely chopped basil. Puree the soup with an immersion blender and leave it on the stove for another couple of minutes.
Serve the soup with fresh basil, croutons and cream or cheese if desired.
