Pink Piggy Lemon Cupcakes
A fun, festive treat for the party table! These lovely lemon cupcakes, topped with cream cheese frosting and marshmallows, are perfect for a kids' party, too.

The ingredients you'll need.

BATTER: In a bowl, combine the softened butter and the sugar.

Beat the butter and sugar with a mixer for a minute, then add the eggs and beat well again.

Add the room-temperature milk along with the lemon zest and juice. Mix everything on low speed.

Step 5:
Add the flour whisked together with the baking powder.

Step 6:
Mix into a smooth batter.

Divide the batter among cupcake liners. You should get 12 cupcakes total, about 1 1/2 tbsp of batter each.

Bake the cupcakes in an oven preheated to 350°F (180°C) for 25-30 minutes. Take them out and let them cool completely.

FROSTING: Combine room-temperature cream cheese, powdered sugar, and pink gel food coloring.

Beat for a minute.

Set aside about 1/2 tbsp of the frosting in a separate bowl, add a couple of drops of red gel food coloring, and stir until the color is even.

CUPCAKES: Spread pink frosting over the top of each cupcake.

DECORATING: Cut the marshmallows like this — halve 6 of them lengthwise to make 12 "snouts," and cut 6 more in half, then each half diagonally in half again, to make 24 triangular "ears." Decorate the cupcakes with these pieces.

Transfer the red frosting to a piping bag, snip off a small tip, and draw the piglets' eyes and mouths.

Use melted chocolate to dot nostrils on the "snouts."
