Step 1:
Put the butter and condensed milk in a bowl (add a little vanilla if you like), beat with a mixer, and set aside.

Pour the cold water into a saucepan, add 2 teaspoons of agar-agar, stir well, and set over medium heat. Once it comes to a boil, pour in the sugar, stirring constantly. When it returns to a boil, add the vinegar and cook for 15-20 minutes.

Step 3:
About 5 minutes before the syrup is done, whip the egg whites to fluffy stiff peaks. Pour the hot syrup into the whites in a thin stream while beating, then add the butter and condensed milk mixture. Work quickly, since agar sets fast. Then pour into a mold.
- You can line the mold with pineapple, pomegranate, or kiwi first — a little tartness plays up the flavor.
