- Cauliflower is a light, healthy vegetable that plenty of people love for how nutritious it is and how easy it is to cook. It doesn't take long to prepare, and there are countless tasty dishes you can build around it. One of the easiest and quickest is this cauliflower casserole with a creamy cheese sauce and a mouthwatering crispy topping. To make it, wash the cauliflower, dry it, and break it into florets. Bring a large pot of water to a boil and drop in the cauliflower. Cook over medium heat for 5-6 minutes from the moment it boils, then drain and tip it into a colander so all the water runs off. Preheat the oven to 400°F (200°C). Now make the sauce: melt 80 g (about 5 1/2 tbsp) of butter in a heavy-bottomed pan over medium heat. Stirring constantly, add the flour and work it into the butter. Add salt and pepper and keep cooking the roux for another couple of minutes. Gradually pour in the milk, whisking constantly for a smooth sauce. Grate the cheese on the fine side of a grater and stir it into the sauce along with the whole-grain mustard. Mix thoroughly again until the cheese melts and the sauce is smooth, then take it off the heat. Grease a baking dish with butter. Put the drained cauliflower in a pan and coat each piece with the sauce, then transfer it all to a deep baking dish. Pour the breadcrumbs into a bowl. Wash, dry, and finely chop the parsley. Combine the breadcrumbs with the parsley and add the paprika. Melt the remaining butter over a water bath or in the microwave and pour it into the breadcrumb bowl. Mix well. Spread the breadcrumb mixture over the cauliflower — this topping gives the finished casserole its appetizing crispy crust. If you like, you can swap the breadcrumbs for finely chopped nuts (walnuts, almonds). Bake the casserole in the preheated oven for 15 minutes, or until an appetizing golden crust forms on top. Cut the finished casserole into portions and serve. Baked cauliflower with cheese is just as good hot or cold. Enjoy!
