  1. Step 1:

    Cut the bread into small pieces. Fry them in a skillet with a little oil on one side only. Set the toasted bread on paper towels to soak up the excess oil.

    Hard-boil the eggs, then cool, peel, and grate them on the coarse side of a grater. Finely chop the green onion and add it to the eggs. Season with salt and pepper to taste. Add the mayonnaise and mix well.

    My herring is already filleted; if yours is whole, clean it and remove the bones. Spread the egg mixture on the toasted side of the bread. Top with herring and garnish with green onion or herbs. The toasts are ready. Enjoy!
