Baking-Soda Puff Rolls
Delicious, airy, and beautiful puff rolls — give them a try! An intriguing recipe with a surprising technique and a tasty result.

Step 1:
Stir the yeast into the milk with the honey. Add the egg, butter and salt, and knead into a dough. By hand this takes about 8 to 10 minutes. The dough should be soft. Cover with plastic wrap and let it rise in a warm spot for 40 to 60 minutes.

Step 2:
Divide the dough into 8 equal pieces. Roll each piece into a round about 8 inches (20 cm) across and 1/16 inch (2 mm) thick. Stack the rounds on a board, brushing each one with softened butter as you go.

Step 3:
Leave the top round unbuttered. Press the stack down gently and chill it in the refrigerator for 20 minutes, then move it to the freezer for another 10 minutes — the butter needs to firm up and partially freeze.

Step 4:
After about half an hour, take out the stack and carefully cut it into 8 wedges. You'll have layered triangles.

Step 5:
CAREFULLY add the baking soda to the boiling water — it will foam up vigorously, so don't breathe in the fumes! Once the soda dissolves, brush each pastry well on all sides with the solution, or spoon it over them held above the pot. Coat them twice.

Step 6:
Grease a baking sheet with butter and dust it with flour. Arrange the pastries on the sheet. If you like, sprinkle with sesame seeds or salt to taste.

Bake in a preheated 400°F (200°C) oven for 15 to 20 minutes.
