Herring Forshmak with Apple
Forshmak is a Jewish dish built around herring. This cold spread has become a beloved favorite in many countries. People add their own touches to taste, but the base stays the same.
Cooking method

Step 1:
Fillet the herring, or start with a ready-made fillet. Boil the eggs for 10 minutes, then peel.

Step 2:
Slice the onion into half-rings, pour the lemon juice over it, and press it down lightly (let it marinate for about 5 minutes). Peel and core the apple. Drizzle the stale bread evenly with 2–3 tablespoons of water and let it soak for a couple of minutes.

Step 3:
Add the herring, apple, onion, soaked bread, 1 tablespoon of vegetable oil, and pepper (optional) to a blender and blend until finely chopped.

Step 4:
Transfer everything to a bowl, add the grated eggs, and mix, whipping until smooth. Refrigerate for about an hour.

Step 5:
Serve as a cold appetizer on dark rye bread or crisp toast. Enjoy!
- Instead of the vegetable oil, you can add 30 g of softened butter. Some people also like to add carrot or processed cheese.
