Tomato and Pepper Lecho

Simple, fast, and delicious—put it up for winter and enjoy! My husband calls this the lecho of his childhood. It's a wonderfully tasty, fuss-free relish, and it really hits the spot come winter.

  • Run the tomatoes through a food grinder and cut the peppers into medium pieces. Put the tomato juice on the stove; once it boils, add the oil, sugar, and salt. After about 5 minutes, add the peppers and simmer for 25 minutes. Stir in the vinegar essence and seal into jars. Feel free to add spices to taste—bay leaf, garlic, or fresh herbs.
