    1. Wash and peel the potatoes and boil them until fully tender. Drain, then pour in the cream and add the salt and butter. Mash smooth with a potato masher.
    1. In a bowl, combine the mustard, sugar, and salt, pour in the olive oil, and squeeze in the juice of a whole lemon. Stir in the chopped thyme leaves to round out the dressing.
    1. Slice the black pudding into rounds about 3/4 inch (1.5 cm) thick.
    1. Thaw the scallops, rinse them, and pat them dry with a paper towel.
    1. Heat the vegetable oil in a heavy-bottomed skillet and sear the scallops and black pudding for 2 minutes per side. Transfer them to paper towels to drain.
    1. Spread the mashed potatoes on a flat platter and arrange the scallops on top, alternating them with the black pudding rounds. Drizzle with the dressing, sprinkle with ground nutmeg, and garnish with a sprig of thyme.
