Cooking method
1. Potatoes are washed, cleaned, boiled until fully cooked. Then drain the broth and pour the potatoes with cream, add salt and butter. We purify with the help of a pusher.
2. Put mustard in a bowl, pour sugar and salt, pour olive oil and squeeze the juice from a whole lemon. Enrich the sauce with chopped thyme leaves.
3. Cut the black pudding into circles about 1.5 cm thick.
4. Defrost the scallops, rinse, dry with a paper towel.
5. Choose a thick-walled frying pan, heat vegetable oil on it and fry the scallops and black pudding for 2 minutes on each side. We spread the fried components of the dish on paper napkins.
6. We put mashed potatoes on a flat dish, and place scallops on top of it, alternating them with pieces of black pudding. Pour over the sauce, sprinkle with ground nutmeg, decorate with a sprig of thyme.
