Broccoli and Cauliflower Purée Soup

  • Start by peeling and dicing the onion, then sauté it for 5 minutes in a skillet with the olive oil and butter until soft.
  • Peel the potatoes and cut them into rough cubes.
  • Add the onion and potatoes to a pot, pour in the broth, set it over the heat, and once it comes to a boil, cook for 10 minutes. Then add the rinsed cauliflower and broccoli and cook until the vegetables are completely tender (test them with a fork).
  • Take the pot off the heat and let it cool slightly, then blend until smooth.
  • Return the soup to the pot and bring it back to a boil, adding the milk and lemon juice.
  • Serve the soup topped with blue cheese (crumble it a little first) and a grind of black pepper if you like.
