Broccoli and cauliflower puree soup

Rich and thick soup is perfect for dinner! This soup is simply magnificent! Both children and adults eat it with pleasure. I generally respect mashed soups - they have brought some variety to the list of liquid dishes, without which the body suffers. So, go ahead! Try cauliflower and broccoli soup! And the main highlight of the soup will be blue cheese - it turns out an amazing combination of flavors!

Cooking method

Cooking time: 1 h 20 min

First peel the onion, cut into cubes, fry for 5 minutes in a frying pan with the addition of olive oil and butter, until the onion becomes soft.

Peel the potatoes, cut them arbitrarily into cubes.

Put the onion and potatoes in a saucepan, pour in the broth, send it to the fire and, bringing it to a boil, cook for 10 minutes. Then add the pre-washed cauliflower and broccoli, cook until the vegetables are fully cooked (check their softness with a fork).

Remove from heat and allow to cool slightly, then grind with a blender until smooth.

Return the soup back to the pan and bring to a boil, adding milk and lemon juice.

Serve the mashed soup with blue cheese, which you need to knead a little beforehand, and ground black pepper (optional).
