Beef Kharcho with Potatoes, Rice, and Tomatoes
Make a classic Georgian dish from scratch! I cook kharcho pretty often, usually with lamb and tomato paste or sauce, but today I'm sharing the famous soup made with beef and fresh tomatoes. It'll be delicious—I promise!

- Let's get right to it: Cut the beef into cubes small enough to fit easily on a spoon. Put the meat in a pot, cover with water, and set it over the heat. Once the broth comes to a boil, simmer the meat on low heat for 60–90 minutes, covered (skim off the foam with a slotted spoon as it rises). Meanwhile, put the rice in a bowl and cover it with warm water. Cut the potatoes into cubes about 1/2 to 3/4 inch (1–2 cm). Finely chop the onion and mince the garlic (or press it). Blanch the tomatoes in boiling water, then drop them into cold water—this makes the skins slip right off. Cut the peeled tomatoes into small cubes. Sauté the onion in the olive oil until golden, about 2 minutes, stirring constantly. Add some of the chopped tomatoes and cook the vegetables another 5 minutes. Check that the meat is done, then add the drained rice, the potatoes, and the rest of the tomatoes to the pot. Cook the kharcho until the rice and potatoes are fully tender, about 15–20 minutes. Stir in the contents of the skillet along with the salt, peppercorns, bay leaf, khmeli-suneli, and dried basil. Cook the soup another 5–10 minutes, then take it off the heat and add the garlic and chopped parsley. Let it rest, covered, for 7–10 minutes, then serve. Enjoy!
